Lemon Raisin Bars

2 c. raisins
1 can 14oz. sweetened condensed milk
1 T. lemon juice
1T. lemon peel
1 c. oleo, room temp
1 1/3 c. packed brown sugar
1 1/2 t. vanilla
1 c. flour
1/2 t. baking soda
2 1/2 c. oats
1 c. chopped walnuts

In a saucepan, combine raisins, milk,, vanilla, lemon juice and lemon peel. Cook and stir over medium heat until bubbly. Cool awhile. In a mixing bowl, combine flour, brown sugar and vanilla., beat well. Add flour and baking soda. mix and add oats and walnuts. Reserve 2 cups for topping. Press remaining mixture into a sprayed grease baking pan. Spread on topping evenly and lightly press down. Bake 25 minutes at 375*. Cool and cut into squares.

Shiny cookie sheets are best for light, even browning.
