Baked Spinach#2

2 eggs, separated
1 can cream of mushroom soup
1 small red onion, hopped
1 c. Colby cheese, shredded
2/3 c. mayo
1/2 c. dry bread crumbs
2 T. meted oleo
2  pkgs 10oz. each frozen chopped spinach, well drained

Mix spinach, eggs, soup, onion and cheese. Turn into a greased square baking pan. Top with bread crumbs, drizzle with oleo. Bake 30 minutes at 350*. Serves 6

To make green onion curls:
Cut off the roots and most of the green tops of a green onion. Using a sharp knife, cut lenghtwise through the stalk, leaving 3/4" uncut at the root end so the spray will not break. Turn the onion parallel to the first, continue cutting the top end into strips. Soak in ice water 2o minutes until curly.
