1 T. canola oil
1 onion, chopped
1 clove garlic, minced
1 green bell pepper, chopped
1 can beef broth
1 c. water
1 can diced tomatoes w/ green chile's
1 1/2 c. uncooked rice
2 cans pinto beans, drained
1 t.chipotle powder, optional but yummy
In a large skillet, cook onion, green pepper and garlic in oil until tender. Stir in broth,water, rice and tomatoes. Heat to a boil, reduce heat, cover and simmer 20 minutes or until rice is done. Stir in beans and heat thru. Serves 6
Chipotle is smoked jalapeno, usually smoked in a wood processing room. I add a few sprinkles to many dishes.
