12 slices cooked bacon, crispy fried and crumbled
1/2 c. cheddar cheese, shredded
2 c. baking/biscuit mix
1 c. milk
2 T. canola oil
2 eggs
Sprinkle bacon and cheese on bottom of a greased square baking dish. Beat remaining ingredients together and pour over bacon. Spread to cover edges. Bake at 425* for about 15 minutes or until edges are browned. Serves 4 to 6. I served apple butter on top but use anything.
An average American eats about 28 pigs in a lifetime, the Dutch eat 3 times more than that.
