Broiled Chicken With Avocado Salsa

October 7, 2004

1 ripe avocado
1 tomato, diced
1 green onion, chopped
1 T. cilantro, minced
3 T.soy sauce, divided
1 t. lime juice
splash hot pepper sauce
4 chicken breasts halves, boneless
1 clove pressed garlic
1/2 t. poultry seasoning

Cut avocado in half, remove seed and peel. Mash gently with green onion, tomato, cilantro, 1 T. of the soy sauce, lime juice, and pepper sauce. Cover and set aside. Place chicken on  a broiler rack, skin side down. Combine the 2 T. soy sauce, garlic and poultry seasoning, brush chicken with half of the mixture. Turn chicken over and brush with remaining mixture. Broil 7 minutes or until tender. Serves 4

Roman Candle Celery Sticks

2 small boxes cream cheese, room temp
2 c. cooked rice
1/2 c. chutney ,chopped
1/4 of a green bell pepper, diced
1 T. minced onion
1/4 c. pecans chopped
6 long celery stalks
parsley flakes
paprika

Whip cream chese until fluffy. Fold in rice, chutney, bell pepper, onions and pecans. Chill until ready to fill celery. Cut celery into diagonal 2" pieces and garnish with paprika and parsley

Garden Creation With Herbs

1/4 of a red onion, chopped
1 clove garlic, minced
1 yellow crooked neck squash, sliced
1 small zucchini, sliced
8 mushrooms, sliced
1 tomato, wedged
1 stalk celery, chopped
splash fresh lemon juice
1/4 t. : rosemary-dill weed-Italian seasoning-fennel seed-lemon pepper

Spray a skillet with olive or canola oil and saute onion and garlic until tender. Add remaining ingredients and mix well. Cover and reduce heat to low and cook about 5 minutes. Serves 6

Herb tip:  Cut a sweet potato or yam into bite size pieces and bake in a sprayed pan with canola oil and bake 10 to 15 minutes oat 350" Make a vinaigrette from 1 T. olive oil and 1 t. apple cider vinegar, dill weed and garlic. That is so healthy, but better yet, experiment with all your spices and let the kids choose. Empowerment on that will lure the kids to make a healthy snack choice

Fettucine with Ham

12 oz. fettuccine
1 c. chicken broth
2 cloves garlic, minced
1 c. mushrooms, chunked
1 small bunch green onions, chopped
4 oz. cream cheese, cubed
4 oz. ham, cubed
1 c. cherry tomatoes, quartered
1/2 c. Parmesan cheese
1/2 t. white pepper

Cook pasta as directed. In a saucepan,over medium heat, bring broth and garlic to a boil. Add mushrooms and onions. reduce heat and simmer 4 minutes. Add cream cheese and ham and cook until cheese is melted.
Add tomatoes. Reduce heat and add Parmesan cheese and pepper. Serve over hot fettuccine. Serves 4

White pepper will give you a nice peppery taste and children who don't like pepper can't see it. It is easier to digest.

Lemon Zucchini Bread

Hey! save me some bread!

1 1/2 c. sugar
4 c. all-purpose flour
1 small box instant lemon pudding
1 1/2 t. baking soda
1 t. baking powder
1 t. salt
4 eggs
1 1/4 c. milk
1 c. canola oil
2 T. lemon juice
1 t. lemon extract
2 c. zucchini, shredded
1/4 c. poppy seeds
1 t. lemon peel

In a large mixing bowl, combine flour, sugar, baking soda, baking powder and salt. In another bowl, combine eggs, milk, oil, lemon juice and lemon extract. Stir into dry ingredients until just moistened. Fold in zucchini, lemon peel and poppy seeds. Pour into a 2 greased 9" loaf pans and bake 50 minutes at 350* or until toothpick clean. Cool 10 minutes before removing.

No-Bake Cookies

2 c. semi sweet chocolate chips, melted
4 c. corn flakes
1/2 c. dates. chopped
1/2 c. chopped walnuts

Taco Platter

2 lbs. ground beef
2 large cans tomato sauce
 2 envelopes taco seasoning
Assorted tortilla chips
large bag of tossed green
1 large tomato . chopped
1 medium onion chopped
big bag of shredded cheddar cheese.

In a skillet, cook ground beef and drain. Add tomato sauce and taco seasoning. Simmer 15 minutes, stirring a few times.
Arrange tortilla chips on a platter Arrange salad mix, tomato and onion around lettuce t make it look pretty.
Place taco meat in a serving bowl as well as the cheese. Serves 6

Spray corn tortillas on both sides, cut into wedges and bake 350* about 8 minutes or until crispy. Kids loves this with salsa and healthy too!

Smoky Sauce

2 T. lemon vinegar
3/4 c. water
1 t. light brown sugar
1/2 t. Dijon mustard
coarse grind black pepper
dash sea salt
1 small lemon, thinly sliced lemon
1 small onion, thinly sliced
2 T. oleo
1/4 c. catsup
1 T. Worcestershire sauce
splash of liquid smoke

Mix vinegar, water, brown sugar, seasonings, lemon, onion and oleo. Bring to a boil and slow simmer 20 minutes. Strain and add remaining ingredients. Heat to a boil.

Great to brush on salmon or any meats!

Pepperoni Rolls

1 loaf frozen bread dough, thawed and risen to double sized
1 1/2 t. Mexican oregano
4 oz. chopped pepperoni
4 oz. grated sharp cheddar cheese
Parmesan cheese

Roll dough out on a lightly floured surface into a 12" x 18 " rectangle. Sprinkle on oregano. Add pepperoni and cheddar cheese. Roll up into a jelly roll and cut into 12 slices. Place on a 9" x 13" sprayed  pan.Sprinkle with Parmesan cheese. Cover with sprayed plastic wrap and let double in size. Remove wrap and bake 18 minutes at 350*

1 c. barbecue sauce, you choose
3/4 lb. ground beef
1/4 lb. ground sausage,
1 small can mushrooms, drained
6 pitted black olives, chopped
4 slices Provolone cheese
4 hamburger buns, you choose''

Combine2 T. of barbecue sauce with both meats, mix well. Shape into 4 patties
Grill outside over glowing hot coals, about 7 minutes each side., top with cheese. When cheese is melted, remove. Meanwhile, mix remaining bbq sauce with mushrooms and olives. Spread over hamburger

If you need to cook indoors, broil on top rack.

Texas Lentil Chili

October 10. 2006

2lb. ground meat, any kind
1 large onion, chopped
1 lb. lentils
2 T. Worcestershire sauce
1 bay leaf
4 T. chili powder
1 clove garlic
2 t. salt
4 c. water
1 can whole tomatoes
1 large cans tomato sauce

Brown meat in a dutch oven, drain well. Add onion and saute 5 minutes. Add water and spices. Stir in lentils and then remaining ingredients. Cover, simmer on lo for about 2 hours. Makes 1 gallon and freezable!.

Best Butter Cookies

Note: Use only the finest ingredients on this recipe
4 sticks butter, room temperature
1 1/2 c. sugar
2 eggs
1 t. vanilla
5 c. all-purpose flour
2 t. baking powder
1/2 t. salt

Cream butter and eggs in a large mixing bowl until fluffy. Beat in eggs and vanilla. Combine dry ingredients and add to creamed mixture. Divide dough into 4 sections. Roll each section 1/4" while keeping remaining dough chilled. Cut as desired with floured cookie cutters. Place 1" apart on an ungreased cookie sheet. Bake at 376* for 6 minutes or until lightly browned. Cool before decorating..
 Makes 2 dozen. Serve with remote control and foot stool.
Dough cam be frozen for 3 months if you don't want to bake a lot.

Scary Pumpkin Pie

1 deep dish graham cracker crust
1 tub sour cream vanilla frosting
1 c. sour cream
1 c. canned pumpkin
1 t. Vietnamese cinnamon
1/2 t. ground ginger
1/4 ground cloves
1/4 t. ground star anise
whipped topping

In a large mixing bowl, combine frosting, sour cream, pumpkin and spices. Beat 2 minutes on medium speed. fold in 1 c. cool-whip. Spread into crust Chill.
California, over 1200lbs.

The scary part is the calories. Sweet indulgence!

Cabbage Rolls

12 large cabbage leaves
1 lb. ground beef, a little over is good
2 t. sea salt
1 c.cooked brown rice
1 egg
1/2 t. thyme
1 can sloppy Joe sauce
1/4 c. water

Let cabbage leaves sit in boiling water 5 minutes, drain. Combine the next five ingredients. Divide equally in the middle of each cabbage leaf. Roll up and fasten with a toothpick. Combine remaining ingredients and pour over rolls.. Cover and simmer one hour,basting occasionally. Serves 6.

When a recipe calls for 1 t. salt, use 1/2 t. You won't miss the salt and you increase the flavoring, like cinnamon.

Italian Dip

1 c. light Miracle Whip
1 c. sour cream or plain yogurt
1 envelope Italian salad dressing mix
1/4 c. each; red and green bell peppers, diced

Mix well and chill until serving. Serve with pita chips or veggies. Makes 2 1/4 cups

Veggie Pizza

1 large pizza crust, ready to eat
2 T. olive oil
1 c. Mozzarella cheese, shredded
1 c. Parmesan cheese
1 c. fresh mushrooms, sliced
1 c. red onion, sliced
2 c. tomatoes, diced
2 t, Italian seasoning
1 t. basil
1/2 t. garlic powder

Brush pizza with 1 T. olive oil. Arrange cheese over oil. Saute mushrooms and onions in 2 T. olive oil until tender. Arrange over cheese. Arrange tomatoes over veggies, then sprinkle on seasonings. Bake in a preheated oven 20 minutes on bottom rack of oven 20 minutes. Serves 4.

Having holiday company with teens, have several health options and they will be happy for turkey reprieve.

Christmas Cookies on a Stick

2 1/4 c. all-purpose flour
1 t. baking soda
1 t. salt
1 c. butter, room temp.
3/4 c. sugar
3/4 c. brown sugar, packed
1 t. vanilla
                                    2 eggs
                                    1 12oz. pkg. semi sweet chocolate chips
                                    12 wooden craft sticks
                                     cream cheese frosting
                                     several cookie  decorations, Christmas colored or shaped

Combine dry ingredients Cream butter with the sugars. Add eggs, one at a time, blending well. Add flour mixture to creamed mixture and blend well. Add chocolate chips. Place the wooden sticks 3" apart from each other on a sprayed cookie sheet and shape 1/3 cup dough into a circle on a stick. Bake 14 minutes at 350*.
Cool before removing and cool completely before decorating.  After applying frosting, add your decorations and share.

It's Thursday night and I love watching "Ugly Betty". It's 42* out but sleet is coming

Mushroom Fondue

1 1/2 lb. fresh medium large mushrooms
1 clove garlic, minced
5 T. butter
3 T. flour
1 1/4 c. hot water
1 T. instant beef bouillon
1/2 t. Worcestershire sauce
1/2 c. sour cream with chives
1/4 c. chives, fresh or dried

In a large skillet,  cook mushrooms with garlic in 3 T. butter until tender, remove. In the same skillet, melt remaining butter, stir in flour. Add water and bouillon and stir until dissolved and thickens. Remove from heat, stir in sour cream. Add mushrooms and chives. Put in a fondue pot and use long toothpicks to serve..
Serves about 5.

Cream of Asparagus Soup

4 c. fresh asparagus, washed, trimmed and cut into 1/2" pieces
1 c. water
5 T. real butter
2 green onions, chopped
5 T. flour
1/5 . ground sea salt
dash white pepper
4 c. milk
1 c. water plus cooking liquid
1 T. instant chicken bouillon'
Cook asparagus in 1 c. water until tender crisp. drain, reserving liquid. Saute green onion in butter. Stir in flour and seasonings and cook over medium heat, stirring constantly until thickened.. Stir in milk, 1 c. water, reserved liquid and bouillon. Cook, stirring with wire whisk until thickened and steamy hot. Stir in asparagus and serve hot. Serves 4

Layered Spinach salad

Approx. 3/4 lb. fresh spinach
1/2 cucumber, sliced thin
1/2 c. radishes, sliced thin
4 green onions, chopped
2 boiled eggs, sliced
3/4 c. ranch dressing
6 slices bacon, crispy cooked
1./2 c. Spanish peanuts

Remove spinach stems and discard. Rinse and dry with a paper towel. Tear spinach into bite size pieces and arrange in a clear or glass bowl. Evenly arrange cucumber, radishes, green onions and eggs and dollop salad dressing over top. Chill overnight Before serving, add bacon and peanuts.

Ribbies

4 lbs. feather ribs
1/4 c. Kikkoman Soy Sauce
2 T. cooking sherry
1 clove garlic, pressed
Any fruity flavor marinating sauce

Cut ribs in pieces. Steam in basket or on a steamer rack and steam 30 minutes. Combine soy sauce, sherry and garlic. in a large bowl and coat steamed ribs with the mixture. Add marinade sauce and chill one hour.
Remove ribs and place, meaty side up on a broiler pan. Bake at 425* for 15 minutes or until crisp. Serve extra sauce in little ramekins. Serves 2 to 4

Pineapple Triple Delight

1/4 c. brown sugar, packed
1 20oz. can pineapple chunks, drained, reserving 1/4 c. juice
1 c. cold milk
1 small box instant vanilla pudding mix
`1 8oz. tub Cool Whip
1 12oz. pkg. frozen butter pound cake
1 c. chopped pecans
1/2 c. halved maraschino cherries
a few chopped pieces of pineapple for garnish

Stir brown sugar into reserved pineapple juice until dissolved. In a medium bowl, stir milk and pudding mix with a wire whisk until thickened. Fold in Cool Whip until smooth.
Cut cake into large cubes and arrange in a glass 3 qt. serving bowl. Add pecans.  Drizzle half the juice mixture over cake.
Layer half the pineapple chunks over cake. Repeat layers. At the end, drizzle with any remaining juice.
Chill 1 hour before serving. Garnish with cherries and pineapple

Jello Rainbow

Devin made this for our family Christmas.
6 1/2 c. boiling water
2 small boxes of each flavor jello: orange-lemon-lime-berry blue
1 tub cool whip, thawed
Pour 1 1/4 c. boiling water into each flavor of jello, stir to dissolve. Pour into 4 separate square pans and chill 3 hours or until firm.
On a foiled cover cardboard surface, arrange square cut jello to form a rainbow. Om each end of rainbow, make a cloud with Cool Whip.
 She was so proud and our family grinned and oohed and aahed.

Chocolate Rice Treats

4 c. Rice Krispies
6 sqs. semi sweet chocolate
1/2 c. light corn syrup
1 T. oleo
1/2 t. vanilla

Grease  rectangle baking pas with oleo. In a large bowl, put in cereal. In a heavy 2 qt. saucepan, stirring constantly, bring chocolate, syrup and oleo to a boil over lo heat. Remove from heat and add vanilla. Pour over cereal and mix until everything is coated. Press into pan and cool at least one hour.

Quick Peanut Brittle

May 9, 2004


1 12oz, can salted peanuts
1 1/2 c. sugar
1/4 c. corn syrup
2 T. oleo

Grease or butter a large cookie sheet. Spread peanuts on cookie sheet. In a 2 qt. saucepan, stir together sugar, syrup and oleo. Stirring occasionally, bring to a full rolling boil over medium heat and boil 14 minutes.
Pour over peanuts. Cool before cracking into candy. Makes 2 lbs.

The word "stewardess" is spelled entirely with the left hand.

It's a cloudy Monday and this recipe should not be made on a high humidity day.

Peanut Butter Bars

1 c. corn syrup
1 c. sugar
1 c. peanut butter
6 c. rice crisp cereal

Butter a rectangle baking pan. In a large saucepan, stir together, syrup, sugar and peanut butter. Bring to a boil , stirring constantly. Remove from heat and add cereal, Mix well and press into pan. cool and cut.

What is orange and sounds like a parrot?.............a carrot!

Chili Rellano Squares

3 c. Kraft Monterrey Jack  cheese
1 1/2 c, shredded cheddar cheese
2 small cans green chile's, drained and chopped
2 eggs
2 T. milk
1 T. flour

Put 1/2 of both cheeses in a greased 8" square baking pan. Sprinkle with chilies and rest of cheeses. In a bowl, combine milk,beaten eggs and flour. Pour over cheese. Bake 30 minutes at 375* Cool and cut into squares. Serves 5

Italian Stuffed Mushrooms

October 9, 2004


4 bacon strips, diced
26ish large fresh mushrooms
1/4lb. cooked ground ham
1 medium Roma tomato, chopped fine
1 c. croutons, crushed, any garlic flavor
1 c. Mozzarella cheese, shredded
1/4 c. grated Parmesan cheese
2 T. fresh parsley, chopped
3/4 t. oregano

Cook bacon until crisp. Remove stems from mushrooms, set caps aside. Mince half the stems and discard the rest. Saute stems in bacon fat for 2 minutes. Add remaining ingredients, except mushroom caps. Blend well. Fill caps with mixture, firmly. Place in a greased baking pan. Bake 12/15 minutes at 425*

A mixed feeling is when you see your mother-in-law backing off a cliff in your new car.

Strawberry Scream

1 pie shell, any flavor
1 can Wilderness strawberry pie filling
 1/2 gallon vanilla ice cream

Spread softened ice cream on pie shell. Add pie filling. Freeze at least 2 hours.

Also, bake a yellow cake in a rectangle baking pan. Cool and add a
can of cherry pie filling. Soooo good!

Sweet Drumsticks

1/2 c. A-1 steak sauce
1/4 c. ketchup
1/3 c. apricot fruit spread
12 nice sized drumsticks

In a small bowl, whisk together steak sauce, fruit spread, and ketchup. Glaze chicken with some of it.
Grill chicken about 20 minutes, basting with the sauce until done.

Egg Salad Triangles

4 boiled eggs, chopped
3 pimiento stuffed olives, chopped
1 green onion, chopped
2 T. mayo
2 t. mustard
5 slices white bread

Combine eggs, olives, green onions, mayo and mustard. Remove crusts and toss out to birds. Divide egg mixture to the bread slices and cut into triangles.

This recipe is so easy to teach a young child to chop and make food pretty. Pretty for a tea party on a cold winter day.

Sometimes I pour chilled V8 juice in pretty crystal goblets or smaller vessels and set them on the dinner table. I let the kids' sit down and drink on it while dinner is finishing. Works for me.


Ham Stuffed Mushrooms

24 large fresh mushrooms
3 green onions, chopped
1 T. oleo
2 t. flour
1/4 t. dried savory, crushed
1/2 c. cooked diced ham
1/4 c. dry bread crumbs, any flavor
2 T. Parmesan cheese

Wash and drain mushrooms. Remove stems, reserve caps. Chop stems to make one cup. Cook stems in oleo with green onions until tender. Stir in flour, seasoning and 2 T. water. Cook and stir until thickened, stir
 in ham and Parmesan cheese. Fill caps with the mixture and place mushrooms in a rectangle baking pan. Top with bread crumbs. Bake @350* for 15 minutes.

Shrimp Brunch Spread

1 3oz. pkg. cream cheese, room temp.
2 T. Miracle Whip
1 T. ketchup
1 t. mustard
1/2 t. fennel seed
dash garlic powder
1/4 c. celery, minced
1 t. onion, minced
1 4 1/2oz. can shrimp, drained and chopped
1/4 c. cucumber, chopped

In a mixing bowl, stir together cream cheese and Miracle Whip, stir in remaining ingredients and nix well.
Put on Melba Rounds and garnish with shrimp. Makes 1 1/4 cups.

Cheesy Garlic Bread

1 medium size loaf of french bread from any deli
1/2 c. oleo, softened
2 cloves garlic, halved
2/3 c. Parmesan cheese, includes pizza packs

Cut slices in bread diagonally at 3/4" intervals. without cutting through. Combine remaining ingredients and gently slice each bread portion and top of loaf. Wrap bread in foil and bake 15 minutes at 350*.

1 large yam, peeled and cubed
2 T. olive oil
1/2 t. dill weed
1 T. balsamic vinegar
1/4 t. garlic powder
1/4 c. chopped green onion
bacon bits

Spray chopped yam inside of a casserold dish. Bake, uncovered for 20 minutes or until desired doneness.
In a small mixing bowl, combine remaing ingredients. Pour over yam and bake another 5 minutes. Serve hot.

I made this and now I snack on it and loosing weight. I try different seasonings, sweet or herbal.

Meat Loaf Babies

1 egg
3/4 lb. ground beef
3/4 lb. ground pork
1 1/2 c. hickory smoke barbecue sauce
1/2 c. dry bread crumbs
1/3 c. fresh parsley
3 T. grated onion
1 clove garlic, minced
salt / pepper

Bet egg in a large mixing bowl. Mix in beef, half the bbq sauce, bread crumbs and seasonings. Shape into 6 baby meat loaves into a rectangle baking pan. Top each loaf with remaining bbq sauce. Bake at 350* for 30 minutes. Let stand 5 minutes. Serve hot or cold on a hoagie.

I made some for me so I could watch "Desperate Housewives" (Sunday) and froze the rest.

Meatball Ratatouille

1 lb. ground
1/4 c. milk
1 t. each: Italian seasoning-onion powder-salt- black pepper and garlic powder
1 T. olive oil
1 small eggplant, sliced in1/2" slices
1 zucchini, 1/2" slices
1 red bell pepper, 1/2" pieces
1 c. cooked pearl onions
1 can stewed tomatoes in liquid, Italian style if possible

Eggplant
Mix ground beef, milk,  and seasonings. Shape into 20 meatballs. Brown meatballs in olive oil in a large deep skillet about 4 minutes. Drain on a paper towel. To skillet, add eggplant, bell pepper and zucchini and cook 3 minutes. Add meatballs. cover and simmer 18 to 25 minutes. Serve over any hot pasta. I used Angel hair.

Going to church doesn't make you a Christian any more than standing in a garage makes you a car.

Buffet Dip

1 clove garlic
1/4 c. ketchup, spicy flavor
3/4 c. sour cream
1 t. horseradish
salt1/4 t. Tabasco

Rub bowl with the garlic clove. Combine ingredients and blend well. Chill. Makes 1/2 cup.

A sunny 17* and our first snow. "Ugly Betty" is on.
