New York Burger

2 T. steak sauce
1 T. mayonnaise
1 c. Swiss Cheese, cut into thin strips
1 c. coleslaw, drain very well
8 slices caraway rye bread
4 hamburger patties, cooked
4 slices corned beef, sliced thin
dill pickles for garnish

Combine steak sauce and mayo, and cheese in a small bowl. Spread some coleslaw on bread. Top with hamburger patty, the corned beef. Spoon on steak sauce topping. Top with other slice of bread. Broil until cheese melts. Garnish with pickles. Serves 4

Grapes For Yard Apes

1 small box sugar free gelatin, lemon flavor
3/4 c. boiling water
1/2 c. cold water
ice cubes
1 c. lactose free milk or any lo fat milk
1/2 c. green seedless grapes

Dissolve gelatin in boiling water. Combine cold water and ice to make 1 cup.. Add to gelatin and stir until ice melts. Add milk and chill 10 minutes. Add grapes and stir into pretty dessert dishes. Serves 5

 I've modified this recipe to modern methods from the original recipe. Lactose free milk works and instead of ice cubes, use frozen lime Popsicles. Don't be afraid to try this with other flavors and fruits. If you make this pretty in special dishes, kids will love it. A nice alternative instead of brownies, ice cream etc.
At least the title is catchy and worthy!

Swiss Style Steak

2# round steak, 3/4" thick, cut into 6 pieces
seasoned salt/ pepper
1/8 t. each: garlic powder- crushed marjoram- and crushed thyme
1/2 c. thinly sliced onion
1 can sliced mushrooms
1 t. Kitchen Bouquet and enough burgundy or water to make 1/2 c...* I used v-8 juice

Marjoram
Spray a heavy duty foil strip, or foil baking pan and arrange meat on it. Foil must be long enough to wrap meat entirely. Season with herbs and top with onion. If using a small can of mushrooms, do not drain. If using a larger can. reserve 1/2 c.liquid.  Add mushrooms over onions. Add Kitchen Bouquet and liquid over meat. Seal tightly and grill outdoors or in oven. Juices can be thickened for gravy or a nice treat for Fido over dry dog food. Bake at 375* about 1 1/2 hours or slow cook outside over low coals 2 hours. Serves 6

 Scoring round steak and trimming fat  assures a better cooking time.

Roulades of Beef

1 1/2# round steak
1 T.Kitchen Bouquet or any brown basting sauce
salt / pepper
2 carrot
2  stalks celery
2 T. canola oil
1 small sliced onion
1 small can tomato sauce, any flavor
1 bay leaf
1 small can sliced mushrooms

 I use my kitchen shears to slice meat into 8 long strips and 1/4" thick approx. Brush meat with Kitchen Bouquet and season. Chop carrot and celery into chunks and place 2 chunks each on one end of of each steak strip. Roll as if making a pinwheel and secure with a toothpick. Brush on more basting sauce. In a large skillet or dutch oven, place roulades in oil. Add onion and cook until onion is soft. Add remaining ingredients. Cover and cook over lo heat about 45 minutes. Remove toothpicks and bay leaf. Serves 4

Chicken Cordon Bleu

1 T. dark mustard
1 T. honey
1 # chicken breasts fillets, boneless/ skinless/ pound down to 1/2" thickness
2 T. oleo
4 slices ham, thin
4 slices provolone cheese
4 T. crumbled bleu cheese

 Combine honey and mustard and brush over chicken. In skillet, melt oleo and chicken 4 minutes, turn and cook 3 minutes. Lay ham and cheeses over chicken and cook until cheese is melted and heated through., about 3 minutes. Serves 4

German Chocolate Cheesecake

1 1/2 c. graham cracker crumbs
1/2 c. sugar
1/2 c. oleo, melted
3 8oz. boxes cream cheese
1 14oz. can sweetened condensed milk
2 4oz. squares sweet cooking chocolate, melted
3 eggs
1 T. vanilla extract
1 tub of coconut pecan frosting or your own recipe


Combine crumbs, sugar and oleo and press into bottom of a 9" x 12" baking dish. Beat cream cheese until fluffy, gradually add milk until smooth. Add remaining ingredients, except frosting, mix well. Pour into crumbs. Bake 20 minutes @350* or until set. Cool and frost. Chill and cut into squares

Teddy Bear Pancakes

1 c. whole wheat flour
2/3 c. all purpose flour
2 T. sugar
1 T. baking powder
dash salt
1 egg
1 3/4 c. milk
2 T. oil
1 c. bran cereal with raisins

 Sift together flours, sugar, baking powder and salt. Set aside. In a medium mixing bowl, beat egg until foamy. Stir in milk, oil, and cereal. Let stand 5 minutes. Stir again. Add flour mixture, stirring only to combine. On a preheated skillet or griddle that is lightly greased, form a bear, using 1 teaspoon for ears and paws. Cook, turning once, until golden brown on both sides.
 Syrup is optional and I used extra raisins. Makes about 12 bears.

 I like to bake breads and usually have whole wheat flour left over. Using the cheapest raisin flake cereal works best in this recipe.
