1 c, Catalina french salad dressing
1 T. dry onion soup mix

Cook chops in oil on both sides about 12 minutes or until juices run clear.Combine remaining ingredients and heat Serve over chops. EASY!

Orange Spice Muffins

1/2 c. packed brown sugar
1/4 c. soft oleo
1 egg, beaten
3/4 c. milk
1/2 c. orange juice
3 c. baking mix
1 T. grated orange peel
1 9oz. box mincemeat, crumbled
cinnamon sugar topping

Beat oleo and brown sugar together until fluffy. Add egg, milk, juice and peel. Stir in biscuit mix and mincemeat. Stir only to moisten. Fill greased muffin cups 3/4 full. Sprinkle with cinnamon sugar. Bake 18 minutes at 375*

Individual Sirloin Steaks

1 large thick sirloin steak
1.2 c. oleo with olive oil
1 T. dried parsley
1/2 of a small onion, chopped
2 T. Worcestershire sauce
2 T. cracked black pepper
1/2  t. dry mustard

Lightly score steak about 1" intervals  Combine oleo with parsley, onion, Worcesters, pepper and mustard. in  saucepan. Heat, stirring occasionally. Reserve half. Cut steak into serving pieces. Brush with butter mixture. Place on hot coals or broiler about 5 minutes on each side or cook to order. On a serving plate, brush on reserved oleo.

Left-overs, if wrapped well, can be served up to two days. Make stew or hash etc.!

Baked Spinach#2

2 eggs, separated
1 can cream of mushroom soup
1 small red onion, hopped
1 c. Colby cheese, shredded
2/3 c. mayo
1/2 c. dry bread crumbs
2 T. meted oleo
2  pkgs 10oz. each frozen chopped spinach, well drained

Mix spinach, eggs, soup, onion and cheese. Turn into a greased square baking pan. Top with bread crumbs, drizzle with oleo. Bake 30 minutes at 350*. Serves 6

To make green onion curls:
Cut off the roots and most of the green tops of a green onion. Using a sharp knife, cut lenghtwise through the stalk, leaving 3/4" uncut at the root end so the spray will not break. Turn the onion parallel to the first, continue cutting the top end into strips. Soak in ice water 2o minutes until curly.

1 1/2 lb.raw shrimp, peeled, deveined
1 small bottle chili sauce
1 T. bottled garlic
12 slices bacon, half cooked, still soft

Combine shrimp with chili sauce in a bowl. Add garlic, Cover and marinate several hours. Cut bacon slices in half and wrap and wrap a half around each shrimp. Secure with a toothpick. Broil several minutes on each side until bacon is done and crisp. Great outside on a hibachi! Makes 24

Seattle Salmon Dip

1 squat can salmon
1 8oz. pkg. cream cheese
1 T. lemon juice
1 T. instant onion
2 t. horseradish
dash liquid smoke
1/4 c. chopped pecans
2 T. parsley flakes

Drain and flake salmon with a fork. Save pecans and parsley for last. Blend salmon with remaining ingredients. Wrap and chill overnight. Before serving, roll in pecans and parsley. Serve with pita chips or crackers.

Juliet's Meat Loaf

1 1/2 lb. ground chuck
1 c. fresh bread crumbs, day old is best
1 egg, beaten
2 T. Worcestershire sauce or liquid smoke or beef broth
1/4 of a small onion, minced
1 carrot, finely grated

Mix well and place in a shallow pan at 359* for an hour and 15 minutes. Let set 5 minutes before slicing.
Serves 6

Put 2 slices day old bread under meat before baking. That absorbs grease and the birds love it.

Sauerbraten Meatballs

1 lb. ground beef
salt / pepper
1 1/3 c. water
1 envelope brown gravy mix
1 bay leaf
dash ground cloves
dash ground ginger
1 t. instant minced onion
2 t. vinegar
1 T. brown sugar

Brown meat with salt and pepper to taste. Form into 10 balls. Brown on all sides. Combine remaining ingredients in a saucepan. Stirring constantly, bring to a boil. Add meatballs. Reduce heat and simmer 10 minutes. Serve over brown rice or whole wheat pasta.

I like this recipe because I can use spices I normally bake with. Germans have such good taste!

Veal Parmesan

1 lb. thin sliced veal cutlets
1 egg, beaten
1/2 c. bread crumbs
2 T. shortening
1 can condensed tomato soup
1/2 soup can water
little sprig of thyme
1/2 of a small onion, chopped
1 clove garlic, minced
4 slices mozzarella cheese
Parmesan cheese

Bread cutlets in egg and bread crumbs. Brown in shortening in an oven proof skillet. Add soup, water, onion, garlic and thyme. Cook, covered 45 minutes or until tender, stirring occasionally. Top with mozzarella and parmesan cheeses. Broil 2 minutes. Serves 3

Spanish Rice

1 lb. lean ground beef
1/2 of a small onion, chopped
1/2 of a green bell pepper, chopped
1/2 t. chipotle powder
1/2 t. garlic powder
1 can condensed tomato soup
1 c. water
1 t. worcestershire sauce
1/2 c. brown rice, but white is good too

Cook ground beef, onion, bell pepper with garlic until done. Add remaining ingredients, cover and simmer until rice is done, about 20 minutes. Serves 4

Easy Beans with Rice

1 T. canola oil
1 onion, chopped
1 clove garlic, minced
1 green bell pepper, chopped
1 can beef broth
1 c. water
1 can diced tomatoes w/ green chile's
1 1/2 c. uncooked rice
2 cans pinto beans, drained
1 t.chipotle powder, optional but yummy

In a large skillet, cook onion, green pepper and garlic in oil until tender. Stir in broth,water, rice and tomatoes. Heat to a boil, reduce heat, cover and simmer 20 minutes or until rice is done. Stir in beans and heat thru. Serves 6

Chipotle is smoked jalapeno, usually smoked in a wood processing room. I add a few sprinkles to many dishes.

Herbed Halibut

1 T. leaf basil, crushed
1/4 t. each: rosemary, oregano crushed red pepper, anise seed
1 can pineapple chunks
1 T. cornstarch
2 cloves garlic pressed
1 T. olive oil
1 lb, halibut steaks, or any white fish steaks

Combine spices. Drain 1/4 c. juice from the pineapple for sauce. For sauce, add remaining undrained pineapple in a small bowl and add 1/4 t. of the spice mixture and cornstarch. Heat until thickened and set aside. Combine remaining spice mixture, garlic and olive oil into a greased casserole, add pineapple juice, then fish. Spoon sauce over fish. Bake at 400* about 15 minutes or until fish flakes. Serves 4

You can soak the herbs in water for 15 minutes before using, indoors or out. Drain well though.

Mix together and marinate your flank steak 6 hours. Drain and grill as desired outdoors.

1 10oz. jar raspberry fruit spread
1 pt. fresh raspberries
2 pkgs. or 6 oz. ladyfingers, cur in half lenghtwise
1 small box instant vanilla pudding, prepared

Combine fruit spread with raspberries. Arrange half of the ladyfingers along bottom and sides of a small trifle dish.. Layer 1/2 of the pudding onto the raspberry mixture, ending with the raspberries. Cover and chill. Serves 5.

Elegant, impressive, and so easy.

4 c. water
1 c. corn meal
dash salt
monster magic powers-- just a sprinkle

Bring 3 c. water to a boil. Add 1 c. water to corn meal and salt. Stir well. While stirring, add to boiling water and cook until thickened. Before serving, add monsters.

Silly? well , ok. If you received this flyer in your food box, be proud of your cornmeal. Other than breading fish and delicious corn bread, this recipe is ancient and kept many from starvation. Cornmeal is a preservative, hence the rhyme, "Pease Porridge in the Pot," Children may balk until after breakfast and they fill full and have a better start. Add goodies like raisins. Left overs are even better cold and sliced.

Toast or heat waffles. Evenly divide ingredients and make sandwiches, that easy. And filling! And healthy!

4 c. cooked diced chicken
1 8oz. can crushed pineapple, drained, save juice for jello
1 apple, chopped
1 stalk celery. chopped
1/2 small bell pepper,chopped
2 T. slivered almonds
1 c. mayo
dash ground ginger
8 soft tortillas
red leaf lettuce

In a mixing bowl, combine chicken, pineapple, apple pepper, celery and almonds. stir well. Mix may and ginger together and add to chicken. Warm tortillas. Place 1 leaf of lettuce on each tortilla. Divide chicken between 6 tortillas. Fold into a wrap and secure with a toothpick. Makes 8.

Don't over stuff or your tortillas break or tear.

Egg Nog Cake

2 envelopes unflavored gelatin
2 c. milk, divided
1 qt. egg nog
1/2 c. cooking sherry
1/2 t. ground nutmeg
1 large frozen pound cake
8 T. seedless jam
2 small boxes instant vanilla pudding mix
whipped topping
chopped nuts

In a saucepan, add gelatin to 1 1/2 c. of the milk, let stand 1 minute. Cook over lo heat about 3 minutes until gelatin is dissolved. Remove from heat and add rest of milk and egg nog, sherry and nutmeg. Pour into a bowl and keep chilled while you go buy school clothes.
Remove pound cake from wrapper and place on a serving platter.Slice cake horizontally into 3 sections. Spread each with jam.  With a wire whisk, beat pudding mix into chilled egg nog mixture. Cover cake and chill about 3 hours. Garnish with whipped topping and nuts. Serves 6.

Juliet's Beef Bake

4 oz. elbow macaroni, cook as directed on pkg.
1 lb. lean ground beef
1 can condensed mushroom soup
3/4 c. milk
2/3 c. catsup
1/2 c. Colby cheese, grated
1 small can mushrooms, drained
salt / pepper
1 c. potato chips, crushed

Cook ground beef until done, drain. In an ungreased casserole, combine ingredients, saving the potato chops for topping. Cover and bake at 350* for 40 minutes. Uncover and bake 5 minutes.
Serves 4 to 6

Cook ground beef with onion and celery, mustard until browned. Place in a greased casserole dish. Mix remaining ingredients together and pour over meat. Top with bread crumbs. Bake uncovered at 360* for 30 minutes. Salt and pepper is optional. Serves 4

Lime Pie in Almond Crust

RAW EGG ALERT, THROW AWAY LEFTOVERS

Crust:
1/2 c. real butter
1 c. all-purpose flour
1/4 c. sugar
1/4 c. almonds, ground or blanched fine
Melt butter in a skillet. Add crust ingredients, blend well. Roast in skillet until golden brown. Reserve 1/4 c. for garnish. Pres crumbs into a 9" pie tin. Using the back of a spoon, press firmly and let cool.
 Filling:
3 eggs, separated
1 4oz. can sweetened condensed milk
1 t. fresh grated lime peel
5 drops green food color
1/2 c. lime juice
whipped cream for garnish
In a large mixing bowl, beat egg white until stiff. Gently add milk, stir well. Add lime peel and food color. Add lime juice, keep whipping. Pour into crust and top with reserved crumbs. Freeze at least 3 hours, then add whipped cream.

Pork Cordon Bleu

4 1/2" thick butterfly pork chops
4 slices ham, thin sliced
4 slices bacon, a nice lean brand
2 slices American cheese
1/4 c. brandy
Serve with
White rice
sliced tomatoes
blue colored jello

On each pork chop, top with a ham slice. Roll chop with ham inside and wrap a bacon slice over that. Secure with a toothpick. Grill over low to medium coals about 45 minutes, turning every 10 minutes. When the meat is tender, place a diagonally cut half piece of cheese on each roll. Do not brown the cheese, but remove from heat. Place the meat rolls on a platter, pour on brandy and light with a long handled match.
Serves 4 and serve with the red white and blue sides.

Use tongs, not a turning fork because  fork will cause the meat juices to escape.

Spaghetti Salad

1 lb. spaghetti
 1 tall can tomato sauce with tomato bits
1 8oz. bottle Italian dressing
1 small red onion, peeled and cut into rings
1 small can sliced mushrooms
1 small can black olives, drained
1 green onion, chopped
1 t. Italian seasoning

Cook spaghetti and rinse in cold water and. drain. Combine ingredients and toss into spaghetti. Chill well before serving. Serves 6 to 8

Juliet's Salad Dressing

1/2 c. olive oil
1/4 c. sugar or substitute
1 T. fresh parsley
dash salt or sea salt
1/4 t. cracked black pepper

Combine and pour into a decorative cruet. Shake before serving.

Think salad, think family. Prepare a beautiful basic tossed salad and serve first. My kids loved the idea of little dishes of add-ons, like chives, parmesan cheese, olives, radishes, croutons, bacon bits, etc.
If the basic salad is too busy, meaning too many ingredients, kids get real picky, but given a choice, they might choose something on the side.
 Hint: Most of us us have a cut off time"It's too close to dinner" and that is so good. About 20 minutes before dinner, I let my daughters have one Dum Dum sucker and that made them ravenous. That really stimulates hunger. Too many snacks before dinner is not good.

Lemon Fish

1 lb. fish fillets, I use talapia
talapia
2 T. lemon juice
1 10oz, pkg. frozen broccoli spears
1/4lb.cheese spread
1/4 c. milk
1/2 t. grated lemon peel
1/2 t. dill weed
black cracked pepper

Sprinkle lemon juice and pepper over fish. Place a broccoli spear on the end of each fillet and roll up. Secure with toothpicks. Place seam side down and microwave under vented plastic wrap on high for 7 minutes. or until fish is flaky. In a  small glass bowl, microwave remaining ingredients 3 minutes, stirring once.  Serve over fish. Serves 4

4 skinless boneless chicken breasts or strips, cut into strips
4 T. lime juice
1 large green bell pepper, cut into julienne strips
2 jalapeno peppers, finely chopped
1/2 c. red onion,chopped
2 T. canola oil
1/4 lb. cheese spread, such as Velveeta
1/2 t. cumin
6  6" flour tortillas

Marinate chicken in lime juice and jalapenos. for 30 minutes, drain. Saute onion and bell peppers in canola oil until tender. Add chicken strips, cook about 7 minutes or until chicken looses its pink. Add remaining ingredients except tortillas, stirring until cheese melts. Wrap in tortillas. Serves 6
 Great served with a side garden salad!

1 medium loaf deli loaf bread, cut lenghtwise
1 lb. thin sliced pastrami
6 slices provolone cheese
apricot honey mustard
sliced black olives
sliced hot pickles
1 envelope au-jus mix

Prepare au-jus as directed. Spread bread halves with mustard, then arrange meat, cheese and condiments.
Wrap in foil and heat slightly in oven or grill. Using ramekins or dixie cups, give each serving a side of the gravy. Serves 4 to 6

Nancy's birthday and while corn was on the grill and her a nice juicy steak, this was a grand surprise.
Grocers now carry so many yummy items now ready to go to the park and have fun.

You can make your own bread using frozen dough. I used 8 Texas size dinner rolls.

Lemon Raisin Bars

2 c. raisins
1 can 14oz. sweetened condensed milk
1 T. lemon juice
1T. lemon peel
1 c. oleo, room temp
1 1/3 c. packed brown sugar
1 1/2 t. vanilla
1 c. flour
1/2 t. baking soda
2 1/2 c. oats
1 c. chopped walnuts

In a saucepan, combine raisins, milk,, vanilla, lemon juice and lemon peel. Cook and stir over medium heat until bubbly. Cool awhile. In a mixing bowl, combine flour, brown sugar and vanilla., beat well. Add flour and baking soda. mix and add oats and walnuts. Reserve 2 cups for topping. Press remaining mixture into a sprayed grease baking pan. Spread on topping evenly and lightly press down. Bake 25 minutes at 375*. Cool and cut into squares.

Peach Crisp

Filling;
6 c. fresh sliced peaches
1 t. lemon juice
1/4 c. packed brown sugar
 1 T. flour
3/4 t. Vietnamese cinnamon or regular cinnamon
Arrange filling in a 9" baking dish, making sure peaches are coated in lemon juice.
Topping:
1 c. rolled oats
1/4 c. packed brown sugar
3 T. canola oil
2 T. oleo or butter flavored sprinkles
1 T. water
1/4 t. cinnamon

rolled oats
Mix topping well and pour over peaches. Bake 30 minutes at 350* or until golden brown. Serves 8

Add 1/3 c. instant milk to your regular glass of milk to to double the calcium intake!

Carmel Apple Dessert

1 tube cinnamon rolls with cream cheese frosting
2 green apples, peeled and chopped
1/4 c. brown sugar
1/2 c. pecans, chopped
1/4 c. graham cracker crumbs
1 t. cinnamon
4 T. carmel ice cream topping

Mix carmel topping with the cream cheese packet from rolls. Set aside. Spray a 8" round cake pan. Cut each cinnamon roll into 4 pieces and place in pan. Combine apples brown sugar graham cracker crumbs pecans and cinnamon. Sprinkle over rolls. Bake at 350* for 25 minutes. Drizzle topping over rolls.

1 1/2 c. yellow cornmeal
1/2 c. all-purpose flour
2 T. sugar
2 t. baking powder
1/2 t. baking soda
dash salt
1 1/4 c. buttermilk
1/4 c. unsweetened applesauce
2 egg whites
2 T. canola oil

In a mixing bowl, combine the first 6 ingredients.. Combine buttermilk, applesauce, egg whites and oil. Stir into dry ingredients ans stir just to moisten. Fill greased muffin cups 2/3 full. Bake at 400* 18 minutes. Cool 10 minutes.

Wilted Lettuce Salad

6 c. shredded iceberg lettuce
1/4 c. scallions, sliced
1/4 c. radishes, sliced
8 oz. bologna slices, julienne strips
6 strips bacon
1/4 c. wine vinegar
1/4 t. seasoned salt
2 hard cooked eggs, chopped

In a pretty salad bowl, combine lettuce, scallions, radishes and bologna. Fry bacon until crisp and pat dry with a paper towel. Crumble into salad bowl. Add vinegar and salt to bacon grease and bring to a boil while stirring. Pour over salad, toss. Garnish with eggs. Serves 4

Season your salad dressings well. Basic oil and vinegar dressings are best when made with twice as much oil than vinegar. Olive oil is more pungent. Peanut and safflower oils are lighter. Red wine vinegar is most intense and apple cider vinegar is the mildest. Lemon juice can substitute for either. Play with your herbs.

1 3/4 c. all-purpose flour
2 T. sugar
1 t. baking powder
1/2 t. baking soda
dash salt
1 c. buttermilk
1 egg, lightly beaten
3 T. melted oleo

Sift dry ingredients together in a large bowl. Combine buttermilk, egg and oleo. Add to dry ingredients, only stirring to moisten. This prevents cracks on the surface. Fill greased muffin cups about 2/3 full. Bake at 400* 25 minutes or until golden brown.

2 c. sifted all -purpose flour
1 T. sugar
1 t. baking soda
1 t. salt
2 eggs
2 c. buttermilk
2 T. melted shortening

Sift together dry ingredients, add eggs, beating until fluffy, add buttermilk, then shortening. That easy!
Pour a scant 1/4 cup onto a heated griddle or skillet, until browned, turning only once. Makes 24 4" pancakes...Chocolate chips may be added

If you don't have buttermilk, add a little white vinegar to your milk, works fine.

Baking soda is super for cleaning wooden cutting boards or wood surfaces. Rub on with a sponge and rinse off.

1 box hash brown, prepared according to box directions.

Combine and mix well:
1/4 c. flour
1/4 t. baking powder
dash salt/ pepper
1 T. evaporated milk
1/2 c. onion, diced
4 egg yolks

Combine with hashbrowns.

Fold in stifflt beaten whites.

In a greased pan or griddle, drop by talespoons, press down with turner and brown on bith sides.

Focaccia

6 frozen whole wheat dinner rolls
1 small onion, diced
1 small zucchini, sliced paper thin
1 green bell pepper, diced
1 t. Italian seasoning
1 c. broccoli flowers, minced
1 c. mushrooms, chopped
1 small red bell pepper, chopped
garlic powder or spread
Parmesan cheese for dusting

Thaw rolls until soft and risen for about 3 hours. Knead rolls together to form a ball. Roll out to a 12" circle.
Place in a sprayed pan, cover with sprayed plastic wrap and let rise 30 minutes. Remove wrap. Sprinkle on seasonings evenly and press gently into dough. Arrange veggies over seasonings. Bake at 350* for 20 minutes or until lightly browned. Dust with cheese..

Chicken Salad In Pita

1/2 c. mayo
2 c. chicken, cooked, shredded
1 T. lemon juice
3/4 c. crushed pineapple, drained
3/4 c. green grapes, halved
1/2 c. celery, minced
dash of tarragon
sprinkle of peppermint leaf

Toast 6 pita halves on a baking sheet. Meanwhile mix filling, blend well and fill pitas. This is perfect for the office or tea parties.Serves 3 to 6

1 whole egg is 213 cholesterol...............use 2 egg whites at 0
1 c. sour cream is 213...........................use plain non fat sour cream at 14
1 oz. cream cheese is 31....................... use nonfat cram cheese at 5

Sauce:

2 onions, chopped
1/4 c. olive oil
1 clove garlic, mashed
1 c. beef stock or broth
2 T. Worcestershire sauce
1/2 c. ketchup

Saute onions in oil, add remaining ingredients, blend well. Simmer on lo 30 minutes.

Meat:

2 lbs. ground chuck
seasoned salt
1 T. Worcestershire sauce
1 T. poppy seeds

Combine ingredients and brush with the sauce. Form into 6 patties.  Grill outside over gray ashes, 5 minutes each side. Occasionally brush meat during cooking. Serve remaining sauce as a dip. Serves 6

 People out of the region ordered it reference of the town name of Worcestershire, 125 years ago.

Bacon Pancakes

12 slices cooked bacon, crispy fried and crumbled
1/2 c. cheddar cheese, shredded
2 c. baking/biscuit mix
1 c. milk
2 T. canola oil
2 eggs

Sprinkle bacon and cheese on bottom of a greased square baking dish. Beat remaining ingredients together and pour over bacon. Spread to cover edges. Bake at 425* for about 15 minutes or until edges are browned. Serves 4 to 6. I served apple butter on top but use anything.

An average American eats about 28 pigs in a lifetime, the Dutch eat 3 times more than that.

Pepperoni Quiche

1 unbaked pie shell, 9"
1 c. Swiss cheese, grated and divided
4 eggs
1 1/2 c, cream or half milk half cream
1/2 t. leaf oregano
1/8 t. cayenne
1 medium onion, chopped fine
2 T. olive oi1
1/4 t. sugar
1 can diced tomatoes, undrained, regular flavor
1/4 t. basil, leaf
1/4 t. Italian seasoning
12 slices pepperoni, quartered
1 c, mozzarella cheese, grated
1/4 c. ripe olives, sliced

Bake the pie shell, unpricked at 375* for 10 minutes. Sprinkle with 2/3 c. of the Swiss cheese. Whisk together the eggs, cream  andcayenne. Add salt and pepper if desired to taste. Pour over cheese and bake 30 minutes or until knife clean. Meanwhile in a skillet, saute onion in olive oil until tender. Add tomatoes, seasonings and sugar. Bring to a boil, reduce heat until moisture evaporates., about 15 minutes. Sprinkle remaining Swiss cheese over quiche, then tomato mixture, then pepperoni, then mozzarella cheese, then olives. Bake 5 minutes or until cheese melts. Let stand for about 10 minutes before cutting. Serves 6.

Sometimes if you use green peppers in your recipes, substitute with snow pea pods.

Autumn Peanut Butter Pie

4 oz. cream cheese, room temp
1/4 c. creamy peanut butter
1/4 c. sugar
1 t. vanilla extract
1 tub whipped topping, thawed
1 crumb crust, your choice
drizzle of chocolate syrup for making a web on top

In a mixing bowl, beat together cream cheese, peanut butter, sugar and vanilla until smooth. Fold in whipped topping. Spoon into crust. Drizzle with chocolate, a web is cute! Cover and freeze 30 minutes before serving.
 Feeds a lot of little goblins or a couple big ones

Tapioca Apples with Honey

4 medium apples, peeled, cored, cut into wedges
3/4 c. honey
3 T. real butter
1 t. fresh grated lemon peel
1 T. fresh lemon juice
1/r t. each: cinnamon and nutmeg
salt if desired
1/3 c. tapioca pearls
2 1/2 c. water

Mix apples with butter, honey lemon peel and juice in a large skillet and add spices. Bring to a  medium heat, stirring occasionally. Reduce heat to low and simmer until apples are just tender. Remove apples to a serving dish. Stir tapioca and water in skillet and let rest 5 minutes.. Stirring constantly, cook over medium heat until a full rolling boil. Remove from heat and pour over apples. Let set 30 minutes  Serves 5

Hot Grande Dressing

1 can diced tomatoes with green chilies
2 small green chilies, seeded and chopped
1/3 c. olive oil
1/3 c. red wine vinegar
2 t. hot mustard
1 t. diced garlic
1 t. hot paprika
1 t. Worcestershire sauce
salt / pepper as desired

Place in a blender and pulsate until blended, about 30 seconds Makes a scant 2 cups.

This dressing is good on any Mexican food with a kick azz attitude.

Bean Dip with Cheese

1 T. oleo
1 onion, chopped in chunks
1 can baked beans, regular flavor
8 uz. Swiss Cheese cubes
1 loaf day old french bread, cubes and lightly toasted
1/2 t. cayenne pepper, optional

Cook onion in oleo until tender, using a saucepan. Mash beans to desired consistency and add to onion with cayenne.. Heat thru. Serve with bread cubes. Makes 3 1.2 cups.

I don't recommend using baked beans with bacon or brown sugar as it takes away the bean taste.

Blue Cheese Spread

4 oz. blue cheese, room temp, crumbled
1 T. honey
1 1/2 t. Worcestershire sauce
1/4 c. whipped cream, real not artificial
2 pears or apples,, sliced, dipped in lemon juice

 Blend blue cheese with honey and Worcestershire sauce. Add whipped cream and combine. Arrange fruit on a serving plate and place dip in the middle.
