1 1/2 c. yellow cornmeal
1/2 c. all-purpose flour
2 T. sugar
2 t. baking powder
1/2 t. baking soda
dash salt
1 1/4 c. buttermilk
1/4 c. unsweetened applesauce
2 egg whites
2 T. canola oil
In a mixing bowl, combine the first 6 ingredients.. Combine buttermilk, applesauce, egg whites and oil. Stir into dry ingredients ans stir just to moisten. Fill greased muffin cups 2/3 full. Bake at 400* 18 minutes. Cool 10 minutes.
This is so good, especially if you have left over meat loaf to stuff in a green bell pepper.
To keep boiled veggies bright, add a few drops of olive oil to the water.
