German Chocolate Pound Cake

July 2, 2002


2 1/4 c. all-purpose flour
1 1/2 c. sugar
1/4 t. cream of tartar
1/2 t. baking soda
1 c. soft oleo
3/4 c. milk
1 t. vanilla or almond extract
4 eggs
 1 pkg-4 oz.- sweet german  chocolate squares, melted and cooled
chocolate glaze
coconut for garnish

Sift together the 1st 4 ingredients. Mix this with milk and vanilla. Add oleo. Mix, then beat with electric mixer on medium for 2 minutes. Add eggs and chocolate Beat 2 minutes. Pour batter into a greased bundt pan. and bake at325* for 20 minutes or until toothpick clean. Cool 15 minutes before inverting.
 Melt 3 squares chocolate with 1 T. oleo, stirring, until smooth. Cool 15 minutes and pour over cake. Top with coconut.

Aloha Christmas Ring

1 frozen bread loaf
2 T. melted oleo
2/3 c. brown sugar, lightly packed
1/4 c. pineapple juice, frozen or fresh
1/2 c. chopped pecans
1/4 t. each: cinnamon, ginger
1/4 t. coconut extract

Place dough in a large bowl sprayed with a non sticking spray. Cover, place in a warm spot until doubled.
In a small bowl, combine oleo with brown sugar and add remaining ingredients. Spray a bundt pan Shape bread dough into pan. Add oleo mixture and cover again and let rise1 hour. Bake at350* for 35 minutes. Allow to cool at least 10 minutes before inverting.

You can turn you crock pot on lo, turn off and let your  bread dough rise in it.

Raspberry Trifle

1 10oz. jar raspberry fruit spread
1 pt. fresh raspberries
2 pkgs. or 6 oz. ladyfingers, cur in half lenghtwise
1 small box instant vanilla pudding, prepared

Combine fruit spread with raspberries. Arrange half of the ladyfingers along bottom and sides of a small trifle dish.. Layer 1/2 of the pudding onto the raspberry mixture, ending with the raspberries. Cover and chill. Serves 5.

Elegant, impressive, and so easy.

Egg Nog Cake

2 envelopes unflavored gelatin
2 c. milk, divided
1 qt. egg nog
1/2 c. cooking sherry
1/2 t. ground nutmeg
1 large frozen pound cake
8 T. seedless jam
2 small boxes instant vanilla pudding mix
whipped topping
chopped nuts

In a saucepan, add gelatin to 1 1/2 c. of the milk, let stand 1 minute. Cook over lo heat about 3 minutes until gelatin is dissolved. Remove from heat and add rest of milk and egg nog, sherry and nutmeg. Pour into a bowl and keep chilled while you go buy school clothes.
Remove pound cake from wrapper and place on a serving platter.Slice cake horizontally into 3 sections. Spread each with jam.  With a wire whisk, beat pudding mix into chilled egg nog mixture. Cover cake and chill about 3 hours. Garnish with whipped topping and nuts. Serves 6.

Lime Pie in Almond Crust

RAW EGG ALERT, THROW AWAY LEFTOVERS

Crust:
1/2 c. real butter
1 c. all-purpose flour
1/4 c. sugar
1/4 c. almonds, ground or blanched fine
Melt butter in a skillet. Add crust ingredients, blend well. Roast in skillet until golden brown. Reserve 1/4 c. for garnish. Pres crumbs into a 9" pie tin. Using the back of a spoon, press firmly and let cool.
 Filling:
3 eggs, separated
1 4oz. can sweetened condensed milk
1 t. fresh grated lime peel
5 drops green food color
1/2 c. lime juice
whipped cream for garnish
In a large mixing bowl, beat egg white until stiff. Gently add milk, stir well. Add lime peel and food color. Add lime juice, keep whipping. Pour into crust and top with reserved crumbs. Freeze at least 3 hours, then add whipped cream.

Peach Crisp

Filling;
6 c. fresh sliced peaches
1 t. lemon juice
1/4 c. packed brown sugar
 1 T. flour
3/4 t. Vietnamese cinnamon or regular cinnamon
Arrange filling in a 9" baking dish, making sure peaches are coated in lemon juice.
Topping:
1 c. rolled oats
1/4 c. packed brown sugar
3 T. canola oil
2 T. oleo or butter flavored sprinkles
1 T. water
1/4 t. cinnamon

rolled oats
Mix topping well and pour over peaches. Bake 30 minutes at 350* or until golden brown. Serves 8

Add 1/3 c. instant milk to your regular glass of milk to to double the calcium intake!

Carmel Apple Dessert

1 tube cinnamon rolls with cream cheese frosting
2 green apples, peeled and chopped
1/4 c. brown sugar
1/2 c. pecans, chopped
1/4 c. graham cracker crumbs
1 t. cinnamon
4 T. carmel ice cream topping

Mix carmel topping with the cream cheese packet from rolls. Set aside. Spray a 8" round cake pan. Cut each cinnamon roll into 4 pieces and place in pan. Combine apples brown sugar graham cracker crumbs pecans and cinnamon. Sprinkle over rolls. Bake at 350* for 25 minutes. Drizzle topping over rolls.

If you want to add toasted coconut, spread coconut on a cookie sheet and toast 6 minutes at 250*. stirring once.

Autumn Peanut Butter Pie

4 oz. cream cheese, room temp
1/4 c. creamy peanut butter
1/4 c. sugar
1 t. vanilla extract
1 tub whipped topping, thawed
1 crumb crust, your choice
drizzle of chocolate syrup for making a web on top

In a mixing bowl, beat together cream cheese, peanut butter, sugar and vanilla until smooth. Fold in whipped topping. Spoon into crust. Drizzle with chocolate, a web is cute! Cover and freeze 30 minutes before serving.
 Feeds a lot of little goblins or a couple big ones

Tapioca Apples with Honey

4 medium apples, peeled, cored, cut into wedges
3/4 c. honey
3 T. real butter
1 t. fresh grated lemon peel
1 T. fresh lemon juice
1/r t. each: cinnamon and nutmeg
salt if desired
1/3 c. tapioca pearls
2 1/2 c. water

Mix apples with butter, honey lemon peel and juice in a large skillet and add spices. Bring to a  medium heat, stirring occasionally. Reduce heat to low and simmer until apples are just tender. Remove apples to a serving dish. Stir tapioca and water in skillet and let rest 5 minutes.. Stirring constantly, cook over medium heat until a full rolling boil. Remove from heat and pour over apples. Let set 30 minutes  Serves 5

If you are baking an apple pie, add 2 T. tapioca pearls with the sugar for a great thickener

Grapes For Yard Apes

1 small box sugar free gelatin, lemon flavor
3/4 c. boiling water
1/2 c. cold water
ice cubes
1 c. lactose free milk or any lo fat milk
1/2 c. green seedless grapes

Dissolve gelatin in boiling water. Combine cold water and ice to make 1 cup.. Add to gelatin and stir until ice melts. Add milk and chill 10 minutes. Add grapes and stir into pretty dessert dishes. Serves 5

 I've modified this recipe to modern methods from the original recipe. Lactose free milk works and instead of ice cubes, use frozen lime Popsicles. Don't be afraid to try this with other flavors and fruits. If you make this pretty in special dishes, kids will love it. A nice alternative instead of brownies, ice cream etc.
At least the title is catchy and worthy!

German Chocolate Cheesecake

1 1/2 c. graham cracker crumbs
1/2 c. sugar
1/2 c. oleo, melted
3 8oz. boxes cream cheese
1 14oz. can sweetened condensed milk
2 4oz. squares sweet cooking chocolate, melted
3 eggs
1 T. vanilla extract
1 tub of coconut pecan frosting or your own recipe


Combine crumbs, sugar and oleo and press into bottom of a 9" x 12" baking dish. Beat cream cheese until fluffy, gradually add milk until smooth. Add remaining ingredients, except frosting, mix well. Pour into crumbs. Bake 20 minutes @350* or until set. Cool and frost. Chill and cut into squares

Scary Pumpkin Pie

1 deep dish graham cracker crust
1 tub sour cream vanilla frosting
1 c. sour cream
1 c. canned pumpkin
1 t. Vietnamese cinnamon
1/2 t. ground ginger
1/4 ground cloves
1/4 t. ground star anise
whipped topping

In a large mixing bowl, combine frosting, sour cream, pumpkin and spices. Beat 2 minutes on medium speed. fold in 1 c. cool-whip. Spread into crust Chill.
California, over 1200lbs.

The scary part is the calories. Sweet indulgence!

Pineapple Triple Delight

February 7, 2011


1/4 c. brown sugar, packed
1 20oz. can pineapple chunks, drained, reserving 1/4 c. juice
1 c. cold milk
1 small box instant vanilla pudding mix
`1 8oz. tub Cool Whip
1 12oz. pkg. frozen butter pound cake
1 c. chopped pecans
1/2 c. halved maraschino cherries
a few chopped pieces of pineapple for garnish

Stir brown sugar into reserved pineapple juice until dissolved. In a medium bowl, stir milk and pudding mix with a wire whisk until thickened. Fold in Cool Whip until smooth.
Cut cake into large cubes and arrange in a glass 3 qt. serving bowl. Add pecans.  Drizzle half the juice mixture over cake.
Layer half the pineapple chunks over cake. Repeat layers. At the end, drizzle with any remaining juice.
Chill 1 hour before serving. Garnish with cherries and pineapple

Jello Rainbow

Devin made this for our family Christmas.
6 1/2 c. boiling water
2 small boxes of each flavor jello: orange-lemon-lime-berry blue
1 tub cool whip, thawed
Pour 1 1/4 c. boiling water into each flavor of jello, stir to dissolve. Pour into 4 separate square pans and chill 3 hours or until firm.
On a foiled cover cardboard surface, arrange square cut jello to form a rainbow. Om each end of rainbow, make a cloud with Cool Whip.
 She was so proud and our family grinned and oohed and aahed.

Strawberry Scream

1 pie shell, any flavor
1 can Wilderness strawberry pie filling
 1/2 gallon vanilla ice cream

Spread softened ice cream on pie shell. Add pie filling. Freeze at least 2 hours.

Also, bake a yellow cake in a rectangle baking pan. Cool and add a
can of cherry pie filling. Soooo good!
