1 3/4 c. all-purpose flour
2 T. sugar
1 t. baking powder
1/2 t. baking soda
dash salt
1 c. buttermilk
1 egg, lightly beaten
3 T. melted oleo

Sift dry ingredients together in a large bowl. Combine buttermilk, egg and oleo. Add to dry ingredients, only stirring to moisten. This prevents cracks on the surface. Fill greased muffin cups about 2/3 full. Bake at 400* 25 minutes or until golden brown.

Pancakes

2 c. sifted all -purpose flour
1 T. sugar
1 t. baking soda
1 t. salt
2 eggs
2 c. buttermilk
2 T. melted shortening

Sift together dry ingredients, add eggs, beating until fluffy, add buttermilk, then shortening. That easy!
Pour a scant 1/4 cup onto a heated griddle or skillet, until browned, turning only once. Makes 24 4" pancakes...Chocolate chips may be added

If you don't have buttermilk, add a little white vinegar to your milk, works fine.

Baking soda is super for cleaning wooden cutting boards or wood surfaces. Rub on with a sponge and rinse off.

Hash Brown Pancakes

1 box hash brown, prepared according to box directions.

Combine and mix well:
1/4 c. flour
1/4 t. baking powder
dash salt/ pepper
1 T. evaporated milk
1/2 c. onion, diced
4 egg yolks

Combine with hashbrowns.

Fold in stifflt beaten whites.

In a greased pan or griddle, drop by talespoons, press down with turner and brown on bith sides.

Focaccia

6 frozen whole wheat dinner rolls
1 small onion, diced
1 small zucchini, sliced paper thin
1 green bell pepper, diced
1 t. Italian seasoning
1 c. broccoli flowers, minced
1 c. mushrooms, chopped
1 small red bell pepper, chopped
garlic powder or spread
Parmesan cheese for dusting

Thaw rolls until soft and risen for about 3 hours. Knead rolls together to form a ball. Roll out to a 12" circle.
Place in a sprayed pan, cover with sprayed plastic wrap and let rise 30 minutes. Remove wrap. Sprinkle on seasonings evenly and press gently into dough. Arrange veggies over seasonings. Bake at 350* for 20 minutes or until lightly browned. Dust with cheese..

Chicken Salad In Pita

1/2 c. mayo
2 c. chicken, cooked, shredded
1 T. lemon juice
3/4 c. crushed pineapple, drained
3/4 c. green grapes, halved
1/2 c. celery, minced
dash of tarragon
sprinkle of peppermint leaf

Toast 6 pita halves on a baking sheet. Meanwhile mix filling, blend well and fill pitas. This is perfect for the office or tea parties.Serves 3 to 6

Some healthy subs:
1 whole egg is 213 cholesterol...............use 2 egg whites at 0
1 c. sour cream is 213...........................use plain non fat sour cream at 14
1 oz. cream cheese is 31....................... use nonfat cram cheese at 5
1 oz. mozzarella at 22........................... .use skim mozzarella at 15
1 T. butter is 33.....................................use oleo at 0
1 c. whole milk is 33.............................use 2% at 18

Oz Burgers

Sauce:

2 onions, chopped
1/4 c. olive oil
1 clove garlic, mashed
1 c. beef stock or broth
2 T. Worcestershire sauce
1/2 c. ketchup

Saute onions in oil, add remaining ingredients, blend well. Simmer on lo 30 minutes.

Meat:

2 lbs. ground chuck
seasoned salt
1 T. Worcestershire sauce
1 T. poppy seeds

Combine ingredients and brush with the sauce. Form into 6 patties.  Grill outside over gray ashes, 5 minutes each side. Occasionally brush meat during cooking. Serve remaining sauce as a dip. Serves 6

John W. Lea and William Perrins were chemists who secretly made Worcestershire sauce for the former Governor of Bengal. He moved to the Far East and ordered it as gifts thus getting a lot of orders.
 People out of the region ordered it reference of the town name of Worcestershire, 125 years ago.
