S'Lunch

4 oz. grated parmesan cheese
3 oz. feta cheese, crumbled
1/2 t. mint
1 egg
cracked black pepper
8 slices buttered ryed bread

Combine ingredients except bread. Scramble soft. Divide among bread to grill 4 sandwiches.

This is one of those day I awake gripy. No reason but heat is my enemy. Sunday I had fixed Italian food and made this with left overs except I used a sandwich grill

Aloha Chicken Wraps

4 c. cooked diced chicken
1 8oz. can crushed pineapple, drained, save juice for jello
1 apple, chopped
1 stalk celery. chopped
1/2 small bell pepper,chopped
2 T. slivered almonds
1 c. mayo
dash ground ginger
8 soft tortillas
red leaf lettuce

In a mixing bowl, combine chicken, pineapple, apple pepper, celery and almonds. stir well. Mix may and ginger together and add to chicken. Warm tortillas. Place 1 leaf of lettuce on each tortilla. Divide chicken between 6 tortillas. Fold into a wrap and secure with a toothpick. Makes 8.

Don't over stuff or your tortillas break or tear.

Pastrami Au-Jus

1 medium loaf deli loaf bread, cut lenghtwise
1 lb. thin sliced pastrami
6 slices provolone cheese
apricot honey mustard
sliced black olives
sliced hot pickles
1 envelope au-jus mix

Prepare au-jus as directed. Spread bread halves with mustard, then arrange meat, cheese and condiments.
Wrap in foil and heat slightly in oven or grill. Using ramekins or dixie cups, give each serving a side of the gravy. Serves 4 to 6

Nancy's birthday and while corn was on the grill and her a nice juicy steak, this was a grand surprise.
Grocers now carry so many yummy items now ready to go to the park and have fun.

You can make your own bread using frozen dough. I used 8 Texas size dinner rolls.

Chicken Salad In Pita

1/2 c. mayo
2 c. chicken, cooked, shredded
1 T. lemon juice
3/4 c. crushed pineapple, drained
3/4 c. green grapes, halved
1/2 c. celery, minced
dash of tarragon
sprinkle of peppermint leaf

Toast 6 pita halves on a baking sheet. Meanwhile mix filling, blend well and fill pitas. This is perfect for the office or tea parties.Serves 3 to 6

Some healthy subs:
1 whole egg is 213 cholesterol...............use 2 egg whites at 0
1 c. sour cream is 213...........................use plain non fat sour cream at 14
1 oz. cream cheese is 31....................... use nonfat cram cheese at 5
1 oz. mozzarella at 22........................... .use skim mozzarella at 15
1 T. butter is 33.....................................use oleo at 0
1 c. whole milk is 33.............................use 2% at 18

Oz Burgers

Sauce:

2 onions, chopped
1/4 c. olive oil
1 clove garlic, mashed
1 c. beef stock or broth
2 T. Worcestershire sauce
1/2 c. ketchup

Saute onions in oil, add remaining ingredients, blend well. Simmer on lo 30 minutes.

Meat:

2 lbs. ground chuck
seasoned salt
1 T. Worcestershire sauce
1 T. poppy seeds

Combine ingredients and brush with the sauce. Form into 6 patties.  Grill outside over gray ashes, 5 minutes each side. Occasionally brush meat during cooking. Serve remaining sauce as a dip. Serves 6

John W. Lea and William Perrins were chemists who secretly made Worcestershire sauce for the former Governor of Bengal. He moved to the Far East and ordered it as gifts thus getting a lot of orders.
 People out of the region ordered it reference of the town name of Worcestershire, 125 years ago.

I don't stock up on poppy seeds, but when I buy them, I use them in breads and muffins and cakes.

New York Burger

2 T. steak sauce
1 T. mayonnaise
1 c. Swiss Cheese, cut into thin strips
1 c. coleslaw, drain very well
8 slices caraway rye bread
4 hamburger patties, cooked
4 slices corned beef, sliced thin
dill pickles for garnish

Combine steak sauce and mayo, and cheese in a small bowl. Spread some coleslaw on bread. Top with hamburger patty, the corned beef. Spoon on steak sauce topping. Top with other slice of bread. Broil until cheese melts. Garnish with pickles. Serves 4

River City Burger

1 c. barbecue sauce, you choose
3/4 lb. ground beef
1/4 lb. ground sausage,
1 small can mushrooms, drained
6 pitted black olives, chopped
4 slices Provolone cheese
4 hamburger buns, you choose''

Combine2 T. of barbecue sauce with both meats, mix well. Shape into 4 patties
Grill outside over glowing hot coals, about 7 minutes each side., top with cheese. When cheese is melted, remove. Meanwhile, mix remaining bbq sauce with mushrooms and olives. Spread over hamburger

If you need to cook indoors, broil on top rack.

Add frozen veggies to the menu! Wrap in foil and place on grill, turning often about 30 minutes

Egg Salad Triangles

4 boiled eggs, chopped
3 pimiento stuffed olives, chopped
1 green onion, chopped
2 T. mayo
2 t. mustard
5 slices white bread

Combine eggs, olives, green onions, mayo and mustard. Remove crusts and toss out to birds. Divide egg mixture to the bread slices and cut into triangles.

This recipe is so easy to teach a young child to chop and make food pretty. Pretty for a tea party on a cold winter day.

Thursday 56* and watching Montell Williams

Sometimes I pour chilled V8 juice in pretty crystal goblets or smaller vessels and set them on the dinner table. I let the kids' sit down and drink on it while dinner is finishing. Works for me.
